sweet potato lovin'

hello my loves!
so, this week i made pete a delicious dinner! (as part of my goals of 2011!) & to celebrate the fact that i got a cute little dinner table for christmas! so now i can cook us meals and we can be cute together while eating there, hehehe...
i wanted to share this recipe i found for sweet potatoes, omg they were SO good!
and i don't know about you, but sweet potatoes are probably one of my FAVOURITE foods!

this recipe was found in people magazine, and it's randomly one of jennifer garners;

lemony maple sweet potatoes
serves : 6 to 8

2 lbs sweet potatoes,peeled and cute into 1" x 2' chunks
1 tbsp. olive oil
1/2 tsp.kosher salt
1/8 tsp. ground black pepper (lol, thx jenny!)
2 tbsp. maple syrup
2 tbsp.lemon juice

1. preheat over to 375
2. toss sweet potatoes with olive oil, salt and pepper in large glass baking dish
3. cook until almost tender, 25 - 30 mins
4. whisk syrup and lemon juice in a small bowl
5. remove the potatoes from the over and drive half the maple-lemon mixture over potatoes.
6. stir gently, return to over, and bake an additional 10-15 minutes, or until potatoes and tender and golden brown.
7. remove from oven, drizzle with remaining maple-lemon mixture & serve!

*& here's a tip - before you do anything to the sweet potatoes, throw them in to microwave for about 4o seconds to soften them up a bit before you put them in the oven! it will help get the ball rolling on making the perfectly finished sweet potato!
