Happy Monday Beautiful! Here we are again, ready to start another amazing week of life. My Monday was pretty good for the most part. During my week off last week (Jules Week) I scratched so many things of my t-do list. I did so many things I've wanted to do for so long, including making homemade french onion soup (for the second time) I was so beyond stoked both times I made this because I was blown away at how perfect it turned out. Domestic goddess in tha houuuuuuusssse.
French Onion Soup is one of those things I only started liking in the last few years and my reaction was like "WTF, how did I not discover this earlier in life?" Anyway since I fell in love, it's been one of my most favourite dishes to order in restaurant (especially during the colder months)
I got this recipe from a "all you need is cheese" magazine that was free from the grocery store, and now I am going to BLOW YOUR MIND and share it with you :)
Ingredients :
- 2 tbsp butter
- 8 cups of red onions, thinly sliced (I think 3 or 4 cups is better though!)
- 1 cup sweet potato, grated
- 1 cup of red wine (duh!)
- 4 cups low sodium beef broth
- 1-2 tsp of fresh rosemary, chopped (game changer!)
- 6 slices of white bread, toasted (or a fresh baguette, or ciabatta!)
- 4.5 oz canadian aged cheddar, grated
- 4.5 oz canadian swiss cheese, grated
Preparation & Cooking :
- In a large sauce pan over medium heat, melt butter and cook onions for 10 minutes, stirring frequently
- Add sweet potato and cook for 3-4 minutes
- Deglaze red wine and reduce by half
- Add broth and rosemary, bring to a boil and let simmer for 15 minutes
- Pre-heat over at 450 F (230 C)
- Divide soup among oven-safe bowls, top each with a slice of bread and a handful of both cheeses
- Place bowls on a baking sheet and cook in the oven until cheese is browned. Serve immediately
